Philly Cheese Steak with Cheese Sauce

The husband is a fan of Philly Cheesesteak, and he gave the thumbs up for this recipe. One the other hand, I have never had one and had nothing to compare it to when I first made it a couple of years ago. However, this time when I when to the states to visit the in-laws, I had my first at the food court of the outlet mall. I am quite happy to say I did a pretty good job creating something I’ve not eaten before! Of course it differs a little, especially how the meat was sliced. The one I had used very thinly sliced beef and was hand torn with a spatula during the cooking process. You can replicate that using shabu shabu beef slices, or if you like a thicker cut of meat, do what I did.

The cheddar cheese sauce can be used for Mac and Cheese, or as a dip for your chips/nachos, best served warm though. Add a little cayenne pepper to spice things up a little. Feel free to add additional toppings such as sauteed mushrooms, caramelized onions, and jalapeños. It makes an awesome quick fix lunch/dinner, because all you need is 20 mins. The kids will love fixing their own sandwich and drowning it with the gooey warm cheese sauce!

Ingredients (Serves 2-3)

  • 500g ribeye steak, sliced into thin strips
  • 1 1/2 tbsp paprika
  • 1 small red pepper, sliced to strips
  • Salt and pepper to taste
  • 3 tbsp canola oil
  • 3 hot-dog buns, halved & buttered
Cheese sauce
  • 2 tbsp butter
  • 2 tbsp plain flour
  • 1/2 cup + 1-1/2 cups fresh milk, total 2 cups
  • 1-1/4 cup shredded cheddar cheese
  • 1/8 tsp ground nutmeg
  • Salt and pepper to taste

Add the paprika, salt and pepper to coat your beef.

Heat a heavy sauce pan on med and the butter.

When butter melts, add the flour.

Use a whisk to mix it in, then add nutmeg and let it cook for a min until bubble and smells like baked pie crust. Careful not to brown the roux.

Add 1/2 cup of milk and mix until you get a paste.

Then add in the rest of the milk. By doing so it help minimize clumps of roux forming to get an even consistency. Continue whisking until sauce thickens.

Remove from heat and mix in the cheese 1/4 cup at a time until fully combined.

Season with salt and pepper.

Heat frying pan on med high, and add oil.
Then add beef and cook it for a min.

Flip and cook the other side.

Heat pan on med high, add 1 tbsp of oil, and sauté red pepper until preferred done-ness.

Toast buttered buns.

Build your sandwich.

Drizzle a good amount of that yummy cheese sauce and serve!

    I've never had Philly Cheesesteak before but your version looks amazing! The sauce looks super tasty- might have to give this a go some time!
