Kisses Stuffed Snowball Cookies

  • 21 Herseys Kisses Chocolate
  • 1/2 unsalted cup butter softened
  • 1/4 cup icing or powdered sugar sifted
  • 3/4 cup ground almond or almond meal
  • 1 cup + 2 tbsp all purpose flour sifted
  • 1 tsp vanilla extract
  • 1/8 tsp salt / pinch of salt
  • Colored sugar sprinkle optional

  • Cream butter until light and fluffy.
  • Add salt and sifted sugar and cream until well combined.
  • Add vanilla extract and almond meal.
  • Mix with electric mixer.
  • Don't forget to scrape down the bowl!
  • Add half of the sifted flour, mix.
  • Then add the other half.
  • You can either chill the dough now for an hour...
  • Or roll out tbsp size balls then chill.
  • Preheat oven to 160C/325F
  • When ready preheat oven to 160C.
  • Take one of the tbsp size ball and make a well in the middle.
  • Place one of the herseys kisses in the well and cover it with the dough.
  • After some trial and error, I felt that it was easier to roll and cover the entire chocolate when I put the base in first.
  • With the dough ball in your hand, sprinkle some red and green colored sugar (optional).
  • Bake it for 20 mins or until bottom is golden brown. Do not brown the top though.
  • While it's still hot, dust some powdered sugar on top of each cookie.
  • Then leave to cool completely.
