Method
- Cream butter until light and fluffy.
- Add salt and sifted sugar and cream until well combined.
- Add vanilla extract and almond meal.
- Mix with electric mixer.
- Don't forget to scrape down the bowl!
- Add half of the sifted flour, mix.
- Then add the other half.
- You can either chill the dough now for an hour...
- Or roll out tbsp size balls then chill.
- Preheat oven to 160C/325F
- When ready preheat oven to 160C.
- Take one of the tbsp size ball and make a well in the middle.
- Place one of the herseys kisses in the well and cover it with the dough.
- After some trial and error, I felt that it was easier to roll and cover the entire chocolate when I put the base in first.
- With the dough ball in your hand, sprinkle some red and green colored sugar (optional).
- Bake it for 20 mins or until bottom is golden brown. Do not brown the top though.
- While it's still hot, dust some powdered sugar on top of each cookie.
- Then leave to cool completely.
