Method
Noodle Sauce
- In a bowl, mix all the ingredients together.
- If planning to serve cold, place the sauce in the chiller for use later.
Egg topping
- Beat egg and season with salt and black pepper.
- Heat pan on medium heat with olive oil.
- Swirl egg around base of the pan to make an egg crepe.
- Flip and cook on both sides, then slice into thin strips.
To serve warm/hot
- Blanch noodles for 2 minutes, drain, and transfer into serving bowl.
- Heat up sauce in microwave and pour over noodles.
- Toss to coat.
- Top with prepared toppings.
- Serve garnished with toasted black sesame seeds and spring onions.
To serve cold
- Blanch noodles for 2 minutes, then transfer noodles into a bowl of ice water.
- Drain and transfer cold noodles on serving bowl.
- Pour chilled sauce over noodles.
- Toss to coat.
- Top with prepared toppings.
- Serve garnished with toasted black sesame seeds and spring onions.
