Avocado Cream Zucchini ‘Pasta’ with Lime Parsley Prawns

Ultra creamy sauce that is not only yummy but good for you! You do not have to worry about carbs because the ‘noodles’ are made out of shredded zucchinis and carrot! Read about the health benefits of zucchinis HERE and the goodness of avocados HERE.

You can even eat it raw if you like, which is even healthier. I like my zucchini and carrot softer so I cooked it for a couple of minutes. Serve with Lime Parsley Prawns if you like a little seafood with your ‘pasta’.

Ingredients (Serves 2)

  • 2 med to large zucchinis, shredded
  • 1 med carrot, shredded
  • 1 tbsp EVOO
  • 1 ripe avocado
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh basil leaves
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Chopped parsley for garnishing

Prep your ingredients, shred the carrot and zucchini lengthwise.

Add lemon zest, lemon juice, avocado, basil, salt, and pepper into food processor.
Blend until creamy, you may have to scrape down the sides a few times.

It should look like that.
If you like your sauce a little more diluted, you can add 1 tbsp olive oil.
Scoop sauce out into a big mixing bowl.

You can skip the cooking process if you prefer your veg raw.
Heat pan on med high heat with EVOO.
Add carrot and cover for 1-2 mins, until carrot soften.
(HCP about 1 min locked)

Add zucchini, garlic, and onion powder.
Toss around a little.
Cover for 1-2 mins.
(HCP about a min, locked)

Remove from heat when veg are soft.
Drain the excess liquid.

Add the ‘noodles’ into the mixing bowl and toss well.

Garnish with chopped parsley and serve!

    wow, excellentt recipe, i like this "tropical" taste. Avocado is a great fruits for many recipe!!!
