This side dish is so easy! 15 mins is all you need, and a great alternative to rice too! Pair it with any meat or veg of your choice to make it a complete meal! Rushing for time? Ingredients (Serves 2)
- 1 cup couscous
- 1 and 3/4 cup chicken stock
- 1 tbsp EVOO
- 2 tbsp yellow onion, diced
- 3 tbsp red pepper, diced
- 1.5 tsp curry powder
- 1 clove garlic, minced
- 3 tbsp chinese parsley, chopped
Heat oil in pan on med heat
Sauteed onion, garlic, and pepper until soft
Add curry powder and sauteed for 30 seconds
Pour in chicken stock and bring to boil
Pour in couscous and bring to boil
Once boiling, turn to low heat, add in parsley
Give it a quick stir, turn off heat
Cover, and let it sit for 5-10 mins
Fluff couscous before serving!
