I love a hearty breakfast and this is one of those! It’s simple and doesn’t need much ingredients, great for a weekend meal!
Ingredients (Serves 2-3)
- 1 can corn beef, cubed. (I used pepper flavoured corn beef)
- 1/2 med yellow onion, diced
- 2 potatoes, diced about a 1x1cm
- 2 tbsp chopped parsley
- 1 tbsp cooking oil
Heat pan on med high heat with evoo and saute onion until soft.
Keep stirring!
Add potatoes, mix well.
Saute for a min.
Add about 2 tbsp water and cover lid for a min or 2. (HCP locked)
This helps to soften and steam potatoes.
Open check potatoes, saute and cover again if potatoes aren’t soft.
When potatoes are softened, add corn beef.
Mix well.
Using your spatula, flatten corn beef hash and let the juices reduce.
Flip to make sure the bottom doesn’t burn. It’s perfectly fine, and yummy to have a crust!
When the juices are gone, add parsley and mix well.
I like to press it down before transferring to serving plate.
Topped with sunny side up, and serve!
