Sausage, Eggs, & Hash Breakfast Casserole

Weekend breakfast is always something to look forward to. It’s kind of a weekly mini-date for the husband and I, where we get to sit down with or without the kids, have our morning coffee, and catch up with each other. We usually walk over to the cafe or hawker across the street for our weekend breakfast, but at times we get really sick of the greasy hawker food or overly priced cafe food.

That Saturday was that one day I knew the husband would be happy, if I made breakfast at home because he was busy watching his Packers play football. I knew he felt somewhat obligated to go have breakfast with me, but at the same time he would like to stay home to watch his team play. So I raided the fridge and came up with a casserole dish with whatever I can find. It was an easy casserole dish with very simple prep work. The oven did most of the work while I played with the kids, and got myself ready for the day. The casserole can be prepared the night before and kept in the fridge until ready to bake. Great for a busy festive morning breakfast or family brunch!

Ingredients (Serves 4) adapted from myrecipe.com

  • 4 large eggs
  • 1 cup milk
  • 5 frozen hash browns
  • 1/2 cup mixed cheeses, mozzarella & cheddar
  • 1 package of Spicy Italian Sausage from Cold Storage, about 350g
  • 1/4 cup diced red pepper
  • 1/8 cup diced yellow onion
  • 1/2 tsp garlic powder
  • 1/2 tsp dried parsley flakes
  • Salt and pepper to taste 

Preheat oven to 180C
Remove the meat from the sausage casing by slitting it with a knife.
Brown the meat in a skillet on med high heat without any oil.
Drain and set aside.

Lay the frozen has browns on the bottom of you 6×8 baking dish.

Then layer the cheese.

Then the red pepper, onions, and browned sausages.

Whisk together eggs, milk, parsley, garlic powder, salt & pepper.
Pour over the top of sausages.

Bake in preheated oven for 35-45mins or until eggs are set.
Allow to cool for 5-10 mins before cutting into it.
