Easy Assam Fish (Premix)

Yum

This was a shortcut dish I made last year halloween evening.

I do not normally use premixed sauces but I needed a cheat night as I will be home late after my Thai lesson. I needed something quick because I needed to get the girls ready for Halloween, and I’ve also been craving assam fish. So I bought a pack to try, and was very impressed by the result. It was so SO yummy! This might be one of those go to recipes when I start working next year.

Ingredients (serves 2)

  • 2 cups brinjal
  • 1 tomato cut into 8 pieces
  • 1/2 small yellow onion, sliced
  • 2 Batang fish fillet
  • 1 packet of Assam curry seafood mix
  • 150ml water
  • 1 tbsp oil

Prep all you ingredients.

Heat pan on med high with oil.
Fry onion until soft.

Add in assam curry mix.

Add water and bring to boil.

Place fish in sauce.

Add the veg, and let it simmer for 10 mins.

Garnish with chopped parsley and serve with white rice.

Bon appetit!!
