Tom Yum Fried Rice

I have been hit pretty hard with a chest infection lately, and was feeling rather fatigue accompanied with body-aches most of the day. It was one of those days that I wanted a quick fix dinner, one that is my kind of comfort food. It is a very simple dinner with very little preparation. I just made a little more effort by ‘dolling’ it up and adding a sunny side up egg on each plate. The husband loved it, and was disappointed that there was no extra serving. I too… secretly wished I made more for my lunch the next day.

Ingredients (Serves 2)

  • 2 servings of cooked rice, preferably overnight rice
  • 1/2 cup of frozen mixed veg, thawed (peas, carrot, corn)
  • 1/2 cup of bean sprouts
  • 1.5 tbsp Tom Yum Paste 
  • 1 clove garlic, minced
  • 1 small thai shallot, sliced
  • 1 egg
  • 10 prawns
  • Salt and pepper
  • 3 tbsp canola oil

Marinade prawns in salt and pepper.
Heat 1 tbsp of oil over med high heat.
Cook the prawns, once cooked, remove and side aside.
Add the other 2 tbsp oil, saute shallot and garlic until fragrant.
Scramble the egg, then add mixed veg and bean sprouts.
Saute for a min or 2.
Add rice and tom yum paste.
Stir fry till well blended.
Season with salt and pepper to taste.
You can add the prawns in to the rice or serve it on the side.
