Theses cookies are also called Mexican Wedding Cookies, Russian Tea Cookies, just to name a few… I sprinkled some colored sugar on it to make it a little more Christmasy.
Ingredients (I made 21 cookies)
- 21 Herseys Kisses Chocolate
- 1/2 unsalted cup butter, softened
- 1/4 cup icing or powdered sugar, sifted
- 3/4 cup ground almond or almond meal
- 1 cup + 2 tbsp all purpose flour, sifted
- 1 tsp vanilla extract
- 1/8 tsp salt
- Colored sugar sprinkle (optional)
Preheat oven to 160C/325F
Cream butter until light and fluffy.
Add salt and sifted sugar and cream until well combined.
Add vanilla extract and almond meal.
Mix with electric mixer.
Don’t forget to scrape down the bowl!
Add half of the sifted flour, mix.
Then add the other half.
You can either chill the dough now for an hour…
Or roll out tbsp size balls then chill.
When ready preheat oven to 160C.
Take one of the tbsp size ball and make a well in the middle.
Place one of the herseys kisses in the well and cover it with the dough.
After some trial and error, I felt that it was easier to roll and cover the entire chocolate when I put the base in first.
With the dough ball in your hand, sprinkle some red and green colored sugar (optional).
Bake it for 20 mins or until bottom is golden brown. Do not brown the top though.
While it’s still hot, dust some powdered sugar on top of each cookie.
Then leave to cool completely.
