Chicken Others Rice

Kecap Manis Chicken with Turmeric Ginger Rice (30 minutes meal)

No time? No problem! All you need is 30 minutes to whip this up. The Turmeric Ginger Rice is very similar to the Indonesian Nasi Kuning, I wanted it to be a little healthier so I omitted the coconut milk and some other spices just to keep it simple. Although, it may not be a bad idea to add some lemongrass or kaffir leaf.

Ingredients (Serves 3)

  • 1.5 cups long grain rice* (Rice cooker measuring cup or 3/4 cup regular measuring cup)
  • 3 cups veg/chicken stock*
  • 1 tsp turmeric powder*
  • 1/2 tsp cumin*
  • 5 slices ginger*
  • 2 chicken breast, sliced
  • 2 tbsp kecap manis (Indonesian sweet soy sauce)
  • 2 tsp soy sauce
  • 1 cup diagonally sliced french beans
  • 1/2 cup thinly sliced red pepper
  • 1 small shallot thinly sliced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tbsp canola oil
Slice the chicken and marinate it in 1 tsp soy sauce & 1 tbsp of kecap manis.
Wash the rice and add in all the ingredients marked * in the rice, mix well, and let the rice cooker do the job.

Get all the other ingredients ready

Heat the pan on mid high heat and add 1 tbsp of oil
Cook the chicken and set aside

Clean pan and add another 1 tbsp of oil in pan on med high heat
Stir fry and garlic until fragrant

Add the red pepper and french beans and stir fry for a couple of minutes

Add the chicken, 1 tbsp kecap manis, 1 tsp soy sauce, 2 tbsp of water and toss well
Season with salt and pepper to taste
If you want, you can use some corn starch slurry to thicken the sauce

When the rice is done, discard the ginger slice
Fluff and serve

I took the extra time to fry up egg while waiting for the rice to be done
Garnish with chopped parsley
