Quick fix meal at its best! This is my lazy go to meal when I have nothing much left in my fridge, is too lazy to walk over to get food, and have a few left over veg that I need to use before it goes to waste. Plus, there is no need to go to a Mexican restaurant and pay $12-16 for something you can fix in less than 30 mins, and cost less than $5. Great party food too, especially helpful when you have impromptu get together, friends of the husband popping in to watch a game, or plain old late night snacking.
Ingredients (Serves 2)
- 2-3 tortilla wraps
- 2 small chicken breasts, blanched and shredded (Or shredded rotisserie chicken)
- 1/4 cup diced red pepper
- 1/4 cup diced tomato
- 1 stalk spring onion, chopped
- 1/4 cup parsley, chopped
- 1/4 cup red & white cheddar cheese (or more if you like)
- Taco seasoning to taste
After shredding the chicken, season it with taco seasoning to taste. I used approximately 2 tsp.
Heat pan on med.
Place wrap on pan, add chicken, tomato, red pepper, spring onion, and parsley on half of the wrap.
Then top with cheese.
Fold it in half.
Use a flipping spatula to press down on the wrap firmly.
Using the bottom part of a heavy sauce pan works well too.
Let it cook for a min or 2, and flip.
Repeat pressing down firmly on the wrap for the other side.
Cut into wedge and serve with salsa, sour cream, or your favourite dipping sauce.

Thanks for popping by. You can get Old El Paso Taco Seasoning at supermarkets. I usually get mine at Cold Storage, where they sell pasta sauce and salsa. Here is a picture I found online.http://www.savingwithshellie.com/wp-content/uploads/2010/09/Taco-Seasoning.jpg
