Rosemary Cauliflower Mash

I made the cauliflower mash to go along side with many of my entree. This is one of my husband’s favourite dish as it is healthy and low in carb.

Ingredients (Serves 2 – 3)

  • One med head of cauliflower, cleaned and cut into florets
  • 1/2 tsp of chopped rosemary
  • Salt and pepper to taste 
  • 1 clove of garlic, peeled
  • 1-2 tbsp butter/margarine

Cut cauliflower into equal size florets so it cooks evenly

Boil a large pot of water, salt it when it comes to boil.
Cook the cauliflower until it is tender.
Mine took about 8 mins.

Using a food processor, put the cauliflower in while it is still hot.
Add your seasoning and rosemary.
Blend till smooth.

There is usually no need to add any liquid in the mix but feel free to add milk, butter, heavy cream if you want a creamier consistency.

And you are done! It is that simple! 
Toddler/baby friendly too! 
Maybe serve it with Slow roasted BBQ ribs or Salmon Potato Cake.
It heats up nicely in the microwave, so you can make ahead if needed.
