Salmon Cakes with Avocado Yogurt Sauce

First look at the plate you might probably think how can patties, french fries, and mayo looking dip be healthy? You are in for a surprise then! The patties are made of yummy vegetables and salmon, and the dip is made of good for you avocado + plain yogurt. French fries are hand cut and baked! So they are kind of like junk food made healthy? They are also perfect for little fingers to feed themselves! I served it with a side of sautéed zucchinis lightly seasoned with salt and pepper. You can choose to bake it inside of pan-frying for an even healthier alternative. 🙂

Ingredients ( 7 x 2.5 inches patties)

  • 250g salmon, blanched skin removed and flaked
  • 2-3 tbsp diced med yellow onion
  • 3 tbsp diced red pepper
  • 1/4 cup bread crumbs
  • 1/4 cup shredded carrot
  • 2 tbsp chopped parsley
  • 1 tbsp chopped basil
  • Paprika, salt, & pepper to taste
  • 1 egg
  • Pam cooking spray or 1 tbsp canola oil or olive oil
Avocado Sauce (makes about 3/4 cup)
  • 1/2 a ripe avocado
  • 1/4 cup greek yogurt/plain yogurt
  • 1 tsp honey
  • Salt and pepper to taste

While the you are blanching the fish, get all the other ingredients ready.
Place it all in a large mixing bowl.

Add your flaked salmon, and egg.
Mix well with hands to combine.

Shape them into patties.
You can make them ahead of time, and leave it in the fridge to chill so it holds it’s shape better when pan-frying or cook it immediately.

Heat pan on med -high heat, add oil.
When oil is hot, cook the salmon patties for 1-2 mins until the under side is brown.
Do not move the patties around or it may fall apart.

Gently flip it over and brown the other side.

Set aside while you make your yogurt sauce.

Add all the ingredients for avocado yogurt sauce into a blender.

Blend until smooth and creamy.

Serve with side of my Hand Cut Baked Fries & your choice of vegetable.
