Shrimp and Sausage Jambalaya

If you are into full flavour, hearty, spicy, one pot, no fuss, minimal-dishes-to-wash meals. This is the one recipe you have to try making. The aromatic vegetables, herbs, and spices adds so much depth to the dish. And quite honestly, it’s almost impossible to screw up a meal with fresh shrimps, sausages, and bacon added to it.

The rice soaked up all the goodness, and turned out absolutely delish! This is probably one of those dish to enjoy on a cool rainy day, or cold winter night! I’d most definitely warm you up from the inside out, very comforting. This Creole dish is definitely a winner!

Ingredients
  1. 1-1/2 cups rice, rinsed
  2. 2-3 smoked sausages (I used hot & spicy smoked sausages)
  3. 1/3 cup bacon bits
  4. 1 small yellow onion, diced
  5. 1 med carrot, diced
  6. 1/2 cup diced celery
  7. 1/2 green pepper, diced
  8. 1 large tomato, seeded and diced
  9. 3-4 cloves garlic, minced
  10. 1/4 tsp cayenne or to taste
  11. 1/3 tsp dried oregano
  12. 1/4 tsp dried thyme
  13. 1-1/2 tbsp tomato paste
  14. 3 cups chicken stock
  15. 1 bay leaf
  16. 4 dashes of tobasco sauce or to taste
  17. Salt and pepper to taste
  18. 1/4 cup spring onion, chopped & divided
  19. 1/4 cup parsley, chopped
  20. 2 tbsp lemon juice
  21. 10 large shrimps, cleaned and shelled
  22. 1 tbsp oil
  23. 1 tbsp butter
Instructions
  1. Using a heavy bottom pot on med high heat, add oil.
  2. Add bacon bits and cook for a min, then add sausages and slightly brown it.
  3. Transfer it to a bowl and set aside.
  4. In the same pot, melt butter on med high heat.
  5. Add celery, carrot, onion, and green pepper.
  6. Saute until softened and onion translucent, then add garlic oregano, thyme, cayenne, tomato paste, and tomato.
  7. Saute till combined then add chicken stock, and bring to a boil.
  8. Lower heat to simmer, and add rice, salt, and pepper, and tobasco sauce. Give it a stir.
  9. Then add bacon, sausages, and bay leaf.
  10. Bring back up to a boil, then lower heat to low.
  11. Cover and allow to simmer for 20 minutes.
  12. After 20 minutes, remove from heat.
  13. Stir in shrimps, lemon juice, spring onions, and parsley.
  14. Cover and allow the steam to cook shrimp for 15 minutes.
  15. Garnish with remaining spring onions before serving.

    I love your blog and the recipes you share are all so awesome.
    This one pot meal is indeed a very comforting meal. I know my kids will love this very much as it has shrimp and sausages.

    Thanx so much for the delicious, filling dish Sharon! This recipe is amazing because it combines the fantastic flavors of the French cuisine (bay leaves, carrot-celery-onion), bacon and sausages which enhance any dish, the rice which provide texture and makes it filling, and shrimp that adds that little extra in taste and texture!
