I was feeling pretty adventurous and so I decided to try to make our very popular local dish ‘Cereal Prawn’ with a twist. Pizza style! It turned out really well! It was interesting, but yummy no less! The only thing was that I though the cereal premix I bought was a tad bit too salty. I would suggest only using half a pack, or better yet just use the raw ingredients instead of the premix, if you already have those ingredients in hand. Ingredients (Serves 3)
- 16 large tiger prawn (I didn’t have enough so I used fish sticks to fill in for the missing prawns)
- 1 ready made 12″ pizza dough
- 1 cup cheese (I used a mix of cheddar and mozzarella)
- About 1/4 cup EVOO*
- 1/2 inch ginger*
- 2 cloves garlic*
- 1 cup curry leaves*
- 1/8 cup almond nuts/pine nuts* (I prefer almonds)
- 1 tsp tomato paste
- Cereal prawn mix, half a packet should be enough (You can use sugar, salt, milk powder, and cereal to make the mix instead of getting a premix, which may turn out salty)
- 2-3 chili padi, seeds removed & chopped
- 10 curry leaves
- 1-2 tbsp butter
Preheat oven to 200*C
Put the ingredients marked * except for the EVOO in the food processor.
Pulse well, then add EVOO till desired pesto consistency
It should look something like that
Stir in 1 tsp tomato paste
Line your pan with baking paper or spray with non-stick oil
Spread the pesto on the pizza dough.
Lay your marinated prawns on top of the sauce. Here you can see I used fish sticks because I did not have enough prawns.
Sprinkle the cheese on top and bake for about 18 mins or until prawns are done and cheese bubbly
Prepare cereal topping while waiting
Melt butter over med high heat
Fry curry leaves and chili padi until crispy
Add in the cereal mix, I used a full pack here. Which was a little too much.
Stir fry quickly for about 1-2 mins till golden brown, make sure it doesn’t burn!
Lay it out on a large flat surface, i used a baking pan to hold it while waiting for the pizza to be done.
Putting it in a bowl may cause it to turn soggy because it is still releasing steam when you pour it out from the frying pan. We want the crunch! 🙂
When pizza is done, take it out and sprinkle cereal topping on top.
Serve immediately and enjoy!
