Beef Stuffed Zucchini Boats

I will be going on a break with my family for a week, so I’m leaving you with this wonderful meal. A week of not cooking and have someone else cook for me! Yay! And a week of spending quality time with my lovely family. I feel ultra blessed! 😀 See you when I’m back!

This is one of my personal favourite! I love zucchinis and anything with melted cheese on it. Friends on my FB would recall me ranting about what an absolute kluts I was because I dropped a tray of beautifully baked zucchini boats on the floor, and it landed on my floor mat. I was so pissed at myself that day to have ruined dinner, and wasted good food. However, I wasn’t ready to hang the white flag yet. So I stormed to the market the next day and gathered all the ingredients I need to remake this dish. Yes, that was how badly I wanted this in my tummy. I was determined not to feed my floor mat this time round! It’s not all that difficult to make and you can stuff it with anything you want. Try couscous or quinoa, and i’m sure it will be a satisfying meal. This time round, I’m filling the ‘boats’ up with a meat sauce and topped with cheddar cheese, and served with a side of garlic mash. A very pretty (and simple) meal if you want to impress your guest.

Ingredients (Serve 2)

  • 2 large zucchinis, halved length-wise and center cored
  • 200g minced beef
  • 4 tbsp diced red pepper
  • 4 tbsp diced yellow onion
  • 4 tbsp diced celery
  • 4 tbsp diced tomato, seeded
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 tsp Italian spices
  • 1 heaping tbsp tomato paste
  • 1/3 cup beef stock
  • 1 heaping tsp brown sugar
  • 1/2 cup red and white shredded cheddar cheese
  • 1 tbsp EVOO
  • Salt and pepper to taste

Preheat oven to 180C
Clean and core the zucchinis with a spoon then place on lined baking tray.

Season with a little salt and pepper. I added a little cumin as well.

Heat pan on med high with EVOO.
Saute onion until soft.

Add minced beef.

When beef is browned add garlic and Italian spices.
Stir well.

Add celery and red pepper.
Saute for a min.

Add tomato paste.

And beef stock. Bring to a boil, add in sugar.
Then let the sauce reduce.

When the sauce is done reducing, toss in tomatoes, and remove from heat.

Spoon fillings onto prepared zucchinis.
Bake for 15 mins at 180C.

Sprinkle cheese on top and bake for another 10 mins till cheese is nicely melted.

Serve with Garlic Mash Potatoes and Gravy.
