Love mashed potatoes but always worried about the calories and bad cholesterol that you will be consuming? Try this healthier alternative, using heart healthy avocado instead of butter. The avocado gave the mash a light green colour, which makes things a little more interesting. It’s equally creamy and yummy!
Ingredients (Serves 3)
- 3 med size potatoes, peeled and cut into smaller pieces
- 2 cloves garlic, peeled
- 3/4 tbsp salt
- 1/2 ripe avocado
- Salt and pepper to taste
- 1/3 cup low fat milk
In stock pot, add potatoes, garlic, and enough water to cover and cook potatoes.
Boil for about 15 mins, until a fork can easily poke through potato.
When done, drain all the water.
Add avocado, and mash.
Slowly adding milk until desired consistency.
Mash with salt and pepper to taste.
