Not-Fried Cornflakes Chicken Tenders

I’ve been craving fried chicken but I refuse to cave in to deep fried oily food. So I made my own version of ‘fried’ chicken instead, using cornflakes for the crunch and marinated in the ultimate spice mix! The husband gave me thumbs up and a big kiss for making him this yummy dinner! *blush* This is a good healthier alternative to the regular unhealthy fried chicken, and it is something I would feed my kids too! Serve with Avocado Mashed Potatoes and a side salad for a complete meal.

Ingredients (Serves 2)

  • 8 chicken tenders
  • 2 cups cornflakes
  • 1 egg*
  • 1 tbsp milk*
  • 1 tsp ultimate spice mix
  • 1/2 tsp dried parsley
  • 2.5 tsp ultimate spice mix (recipe below)

I’m not kidding when I said ultimate spice mix!
13 spices all together!

Makes about 3 tbsp of spice mix

  • 2 tsp paprika
  • 1/4 tsp ground oregano
  • 1/2 tsp basil
  • 1/4 tsp turmeric
  • 1/4 tsp coriander
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp lemon pepper
  • 1/2 tsp celery salt
  • 1/2 tsp chilli powder
  • 1/2 tsp all spice
  • 1/2 tsp cumin
  • 1/4 tsp salt 

Mix it all in an air tight container. This spice mix is good for marinating any kind of meat/tofu.

Marinade chicken with 2 tsp of ultimate spice mix for at least an hour or overnight.

I used my 9 minute marinator, which is equivalent to an overnight marinate.

Preheat oven to 200*C
In a ziplock baggie, pour in 2 cups of cornflakes, dried parsley, and 1 tsp of ultimate spice mix.

Crush with hand or use a rolling pin to crush cornflakes into about 1/4 of it’s size.
Shake well to mix spices.

Beat egg and milk together.
Place marinated chicken tenders in egg.

You can either put the chicken tenders in the baggie to coat, much like shake and bake.

Or pour cornflakes out onto a plate or container and use hand to coat chicken with cornflakes.

Spray baking tray with cooking spray, and lay chicken out at least an inch apart. Do not over crowd!
Spray PAM cooking spray or drizzle some butter/oil on top of the chicken.
Bake for 10-13 mins or until done depending on the size of your chicken tenders, and cornflakes are golden brown. I did 10, and my chicken tenders were pretty small (the ones you get from NTUC).

Serve with your favourite side dish and/or dips. Here I served it with Avocado Mashed Potatoes and sauteed beans.
