Well, I managed to make a healthy dish unhealthy because I used bacon bits. Feel free to use diced chicken cubes, salmon, or even firm tofu cube for to make this a healthier alternative. Personally, I feel that brown rice makes good fried rice because of it’s drier texture. The flavour of the meat and seasoning seems to coat each grain of rice nicely without it breaking apart. The good thing about using brown rice is not only for it’s nutritional properties, there is also no need to keep it in the fridge over night before frying it like what you would do for white rice. Just cook it in the rice cooker, fluff it up, and use it to make fried rice. I assure you it’ll not be soggy or wet if you cooked your plain brown rice right. I served this up with my Grilled Vietnamese Pork Chops, and a sunny side up. But it is good enough on it’s own too.
Ingredients (Serves 3-4)
- 3 cups cooked brown rice
- 1/2 cup bacon bits
- 3/4 cup frozen mixed vegetable
- 2 eggs
- 1 1/2 tbsp fish sauce
- 1 1/2 tbsp light soy sauce
- Salt and pepper to taste.
- 2 tbsp chopped spring onions
Heat pan on med high, fry bacon bits.
When bacon bits starts to brown, push aside and beat in 2 eggs.
Scramble it.
Then add frozen vegetable and stir fry for 1-2 mins.
Add brown rice, stir fry.
Break up any large clumps.
Add fish sauce and soy sauce.
Season with salt and pepper to taste.
Remove from heat, add green onion.
Mix well.
Plate up and serve with Vietnamese Pork Chops!
